Award Winning Our traditional British breeds (including Berkshire, Tamworth and old Welsh bloodlines) and traditional methods of rearing are reflected in the unrivalled taste of our pork. Heal Farm pork is full flavoured, moist and stands well to the knife. The crackling is legendary. Try Leg and Loin joints for roasting, ungarnished; or stuff with prunes or apricots; or rub over with garlic and a little ground star anise. Lean tenderloin is excellent for Chinese stir fry dishes. Chops can be grilled, or braised in cider with tomatoes, onions and sliver or two of orange zest. Barbecue ribs and strips of belly marinaded in honey and soy sauce until caramelized around the edges.
